I operate a business that makes hot-smoked salmon, and these nonstick mats are indispensable to my operation. The mats, with some nonstick spray added, allow smoked portions to easily peel away, without tearing delicate skin or causing other unsightly damage to the fish. The mats are also quite durable -- the first ones I bought two years ago have been used regularly in my commercial operation, and they show almost no signs of wear.
